Another summery recipe idea...this time for potato salad.
Instead of mayo, I'm using avocado and plant based mayo.
Ingredients
x2 avocados
2 tbsp mayonnaise
Bag of sugar snap peas
Bunch of spring onion
Fresh parsley and chives
Salt and pepper to taste
Method
1. Boil or steam some new potatoes.
2. While the potatoes are cooking, mash up your avocado.
3. Add your mayonnaise and blend till smooth.
4. When the potatoes are ready, drain and let them cool.
5. Add your avocado and mayo sauce and cover the potatoes.
6. Add your chopped spring onion, sugar snap peas and fresh parsley.
7. Add salt and pepper to taste and serve.
You end up with a lovely green twist on the traditional potato salad.
Try adding chopped green chilli for an extra kick!
