Try my super easy super summer slaw.
This is a crunchy, sweet and tangy slaw that will go well with some veggie kebabs or in a bap. I like it because it's not drenched in light mayonnaise and you get the gut-healthy benefit of fresh vegetables, onion and apple cider vinegar.
Super Summer Slaw
Ingredients:
1/4 head of red cabbage sliced
1/4 head of white cabbage sliced
2 carrots
1 apple
1 red onion
50g of yoghurt (to taste)
50g of mayonnaise
1-2 tbsp of apple cider vinegar
100g toasted walnuts (chopped)
Salt and pepper (to taste)
Just chop and grate your raw vegetables and apple, then mix in the rest of the ingredients.
This is a great one for making a day ahead and keeping in the fridge.
I love this on top of veggie tacos, or tucked inside a great veggie burger.
