Lemon and Elderflower Horchata - (with a creamy coconut twist)

A creamy plant based, Low sugar summer cooler that keeps the blood sugar steady.
Ingredients (4 Servings)
1 Cup long grain rice
5 Cups water (2 to soak, 3 to blend)
1 Can (400ml) light coconut milk
1 Organic Lemon (peeled into zest strips)
3 - 4 tbsp Fresh Elderflower blossoms or (2 tbsp sugar free elderflower syrup)
1-2 tbsp Stevia (to taste)
A pinch of salt
Method
Combine rice (or almonds), lemon zest strips and fresh elderflower blossoms in a bowl with 3 cups of water. Cover and soak overnight to infuse the aromas.
Pour the entire mixture (including soaking water or coconut milk) zest and flowers into a blender. Add 2 cups of fresh cold water, the lemon juice, sweetener and salt. Blend on high until completely milky.
Strain through a fine mesh cloth or nut milk bag into a pitcher, squeezing tightly to discard the pulp. Serve chilled over plenty of ice.
Easy Elderflower and Lemon Posset

A classic and creamy infused delight.
Ingredients (4 Servings)
300ml Double Cream
Juice and zest of 2 large organic lemons
2 tbsp elderflower coridial or syrup
Juice and Zest of 2 large organic lemons
1/2 tsp Stevia
Method
Add the Double cream and sweetener to a saucepan over medium heat. Bring to a gentle boil, stirring constantly and let it bubble softly for 3 minutes until the sweetener completely dissolves.
Remove from heat, then whisk the lemon juice and zest with the elderflower coridal. The cream will begin to thicken.
Divide the smooth mixture evenly between 4 glasses or ramekins. Let them cool to room temperature, then pop them into the fridge for atleast 3 hours to set into a velvety spoonable cream.
Garnish with fresh elderflower or lemon peel before serving.
Garden Graze Dressing

Light and fragrant, combining delicate floral notes this dressing is perfect drizzled over green salads with cucumber, pea shoots and goats cheese.
Ingredients
2-3 Elderflower heads
3 tbsp lemon juice
1 tsp finely grated lemon zest
2-3 tbsp olive oil
1 tsp stevia
pinch of salt
Combine the flower heads, lemon juice and zest. Leave to rest for 20-30 minutes to infuse.
Whisk the olive oil, sweetener and salt. Strain.
